Coffee Rubbed Flat Iron with Au Jus Cream Sauce, balsamic bacon roasted Brussels, mashed potatoes




Coffee Rubbed Flat Iron Steak with Au Jus Cream Sauce

Steaks:

Flat Iron Steak 4 each

Canola/Olive oil Blend 2 oz

For the Sauce:

4 oz Au Jus

6 oz Heavy Cream

2 Tablespoons of Butter

For the rub:

1 tablespoon Pro Seasoning

2 teaspoon espresso powder

1 teaspoon brown sugar

½ teaspoon chili powder

Method of Prep:

Preheat oven to 375 degrees. Dry steaks with a paper towel. Rub the steaks with the steak rub. Preheat oven safe skillet on medium high heat. Add oil to pan and heat until the oil is smoking slightly. Add steaks to the pan and sear until a crust is achieved. Place pan in the oven and finish cooking steaks to desired internal temperature:

Rare: 125 degrees

Medium Rare: 135 degrees

Medium: 145 degrees

Medium Well: 150 degrees

Well Done: 160 degrees

Remove steaks from pan and let them rest on a plate. Add Au Jus to the pan and reduce the sauce by half. Add cream and continue to reduce the sauce while stirring until the sauce is thick enough to coat the back of a wooden spoon. Remove sauce from heat and stir in butter little by little until it is fully incorporated. Add Pro Seasoning to taste.

Mashed Potatoes

Potatoes 4 each

Butter 6 tablespoons

Half and Half 4 oz

Pro Seasoning To Taste

Method of Prep:

Peel potatoes if desired. Cut potatoes into uniform pieces, about 2 inches in diameter. Place cut potatoes in a 4 quart pot. Cover potatoes with room temperature tap water. Cover with a lid and bring to a boil. Boil until fork tender, about 15 minutes. Drain the water and return potatoes to pot. Add butter, half and half, and mash with potato masher. Add Pro Seasoning to taste.

Balsamic and Bacon Roasted Brussels Sprouts

Brussels sprouts 12 oz

Bacon 2 slices, diced

Canola/Olive oil blend 2 oz

Balsamic vinegar 2 oz

Pro Seasoning To Taste

Method of prep:

Preheat oven to 375 degrees. Trim Brussels stems and cut in half. Toss all ingredients together. Spread Mixture onto a sheet tray. Roast for 20-25 minutes. Season with Pro Seasoning To Taste.
