Service Description
Spice up your culinary skills in this saucilicious cooking class perfect for you or you and a small group of other saucy connoisseurs. Choose 3 out of the 5 sauces listed below for a customized sauce workshop with Chef Nikki! 1. Beurre Blanc (white wine)/Beurre Rouge (red wine): White wine or red wine butter sauce to accompany fish, chicken, or steak. 2. Emulsified Sauces - Vinaigrette/ Hollandaise/Bearnaise: Hollandaise is a warm emulsified egg yolk and butter sauce for eggs benedict, asparagus, and many other delicate foods. Bearnaise is typically served with steaks. And every great cook should know how to make a proper vinaigrette for salads and even marinades. 3. Velouté/ Sauce Supreme: Velouté is a standard gravy, we kick it up a notch by turning this mother sauce into sauce supreme by adding mushrooms and cream! Chef Nikki will show you how to fabricate an airline chicken breast to go perfectly with these sauces. 4. Nage: An often forgotten but exquisite sauce. We start by making a flavorful shallow poaching liquid for salmon. Then we remove the salmon and reduce the liquid to an intense reduction and finish the sauce with cold butter to make a velvety blanket for our poached fish. 5. Bechamel/Mornay: Bechamel is one of the cornerstones of sauce making. Learn this mother sauce to make the base for dips, mac and cheese, soups, and even gravy for biscuits. How it works: - Cost of food is not included in the booking - Carefully select your classmates or book a solo lesson. - A shopping list will be provided at least 48 hours before the class. - Don't want to shop? No problem! Concierge services and shopping can be provided for you, however the cost of food is the sole responsibility of the client. Please disclose any food allergies or dietary restrictions prior to confirming booking. *Consuming raw or undercooked meats, poultry, seafood, shellfish, or eggs, may increase your risk of foodborne illness, especially if you have certain medical conditions *We request that you cancel at least 48 hours before the scheduled class. To cancel, please email nikkipettineo@gmail.com . If you have to cancel your reservation, we will provide a full refund. However, if you do not cancel prior to 48 hours before the class, we cannot offer a refund.
