Famous Chicken (maple, mustard, garlic), Asiago Mac and Cheese, Roasted Green Beans

Beautifully caramelized maple-mustard-garlic chicken with broccoli cauli rice

Famous Chicken

Serves 4

Chicken Ingredients:

- Chicken thighs 4

- Garlic, minced ¼ cup

- Maple syrup 1 cups

- Chicken Stock ½ cup

- Mustard, grainy ½ cup

- Pro Seasoning 2 teaspoon

- Canola oil 2 tablespoons

Method of Prep:

Preheat oven to 350 degrees. Heat a cast iron skillet or conventional skillet over medium high heat. Add canola oil to the pan. Dry chicken thighs on a paper towel and season with Pro Seasoning, covering both sides of the chicken. When the pan begins to smoke, add chicken skin side down and sear until golden brown (about 5 minutes on each side). Remove the chicken from the pan. Add garlic to the pan and cook for 1 minute on low heat, so as not to burn the garlic. Increase heat to medium high, add maple syrup, chicken stock, mustard and stir. Add chicken and drippings from the chicken back into the pan. Cover and cook in the oven until an internal temperature of the chicken reaches 165 degrees (about 30 minutes). Remove chicken from the sauce and reduce to desired thickness. Season sauce and serve with chicken.


Asiago Mac and Cheese Ingredients:

- Unsalted butter ¼ cup

- All Purpose Flour ¼ cup

- Whole Milk 16 oz

- Asiago cheese, grated 1 cup

- Cheddar jack cheese, grated 1 cup

- 1 pound boiled elbow macaroni

- Pro Seasoning TT

Method of Prep:

In a medium sauce pan melt butter over medium heat. Be careful not to brown the butter. Once it's melted add the flour and stir into a paste. Cook the paste for 1 minute and add milk. Use a rubber spatula to scrape the bottom of the pan to make sure it's all incorporated. Use a whisk to stir the sauce over medium to high heat. Cook until the sauce is a nappe consistency. In a large mixing bowl, mix all of the cheese, pasta, sauce, and seasoning to taste. Transfer to a baking dish or cast iron skillet. Bake at 350 until brown on the top and the Mac n cheese is bubbly. Top with extra cheese before baking for extra golden brown results.

Oven Roasted Green Bean Ingredients:

- Washed and trimmed Green Beans 12 oz

- Butter 2 oz

- Pro Seasoning 1 teaspoon

- Cajun Seasoning ¼ teaspoon

Method of Prep:

Melt butter in a microwave safe dish. Toss all ingredients together and spread on a sheet tray. Roast in the oven for 15 minutes. Serve.
