Greek Salad with Lemon Herb Vinaigrette


2 Cucumbers, large dice

½ Red Onion, Sliced

2 Roma Tomatoes, sliced

1 Red Bell Pepper, large dice

2 Green Peppers, Large dice

1 cup black olives, sliced

1 cup feta cheese crumbles

2 Tablespoons Meyer Lemon Balsamic Vinegar (or white balsamic)

2 Tablespoons Red Wine Vinegar

1 oz Dijon Mustard

2 Tablespoons honey

¼ teaspoon Pro Seasoning All Purpose

Fresh ground Pro Seasoning Everything but the Salt

½ cup Olive oil

Method of prep:

In a medium sized mixing bowl, combine all ingredients except for the oil. Whisk ingredients until completely combined. Slowly drizzle oil into the mixture while whisking vigorously. Set aside to dress salad.

To Assemble the Salad:

Toss all ingredients in the vinaigrette and serve!
