Apricot Chipotle Chicken with Goat Cheese


6 oz Chicken breasts x 4

2 tablespoons vegetable oil

2 teaspoon Pro Seasoning or seasoned salt

8 oz goat cheese

For the Glaze:

2 tablespoons adobo sauce from canned chipotle

1/4 cup apricot preserves

2 cloves minced garlic

1 teaspoon Pro Seasoning or seasoned salt

Method of prep:

Mix the glaze ingredients together and set aside.

Preheat oven to 350 degrees

Heat a cast iron skillet or oven safe saute pan over medium high heat. Season chicken breasts with Pro Seasoning. Add oil to the pan an allow to smoke. Add chicken breasts and sear on both sides. Brush glaze over chicken and place into the oven. Roast chicken until an internal temperature of 165 is reached (about 10 minutes). Top chicken with more glaze. Add a 2 oz pat of goat cheese to the top of the chicken. Serve!
