Duck Egg Pasta

Extruding the pasta using a pasta machine




Makes 2 pounds of pasta

Ingredients:


00 "double zero" Flour

2 cups

Duck Egg Yolks

5

Duck Egg, whole

1

Salt

1 teaspoon

Olive Oil, extra virgin

1 Tablespoon




Making the pasta dough using the "well" method.


Method of prep:


Mix all ingredients together until dough can be kneaded. Duck eggs have a higher fat content than chicken eggs. If the dough seems crumbly, you can add a teaspoon of water at a time until it is able to be kneaded. Knead dough for 2 minutes and let rest for 20 minutes before rolling out the duck egg pasta dough.





Whisking the egg yolks into the flour to make the pasta.

Covering the pasta dough with plastic wrap.
